Apple Cheddar Baked French Toast

This baked version of French toast is easy to assemble, bakes up in 60-65 minutes and tastes fabulous with a drizzle of maple syrup. Perfect for a brunch menu along with some Canadian bacon.

 

Ingredients:

  • 4 cups cubed stale whole wheat bread, I used 2 whole wheat bagels
  • 1 cup well packed grated old or extra old cheddar cheese
  • 1 Ambrosia or Gala apple, scrubbed and cut into small pieces
  • 2 omega-3 eggs
  • 1 cup skim milk

Instructions:

  1. Make sure the rack is in the centre of the oven. Preheat oven to 350F.
  2. Line a 9×9-inch baking dish with parchment paper or oil well.
  3. Sprinkle half of the cubed bread or cubed bagels on the bottom. Sprinkle half the chopped apple and half the grated cheese. Repeat.
  4. Beat the eggs and milk together and pour over the bread/apple/cheese mixture. Gently press down to help the bread or bagels absorb the liquid.
  5. Bake for 60-65 minutes or until the egg mixture has cooked and the top is a deep golden brown. Remove from oven and let set for 5 minutes. Serve with a drizzle of maple syrup.
