This baked version of French toast is easy to assemble, bakes up in 60-65 minutes and tastes fabulous with a drizzle of maple syrup. Perfect for a brunch menu along with some Canadian bacon.
Ingredients:
- 4 cups cubed stale whole wheat bread, I used 2 whole wheat bagels
- 1 cup well packed grated old or extra old cheddar cheese
- 1 Ambrosia or Gala apple, scrubbed and cut into small pieces
- 2 omega-3 eggs
- 1 cup skim milk
Instructions:
- Make sure the rack is in the centre of the oven. Preheat oven to 350F.
- Line a 9×9-inch baking dish with parchment paper or oil well.
- Sprinkle half of the cubed bread or cubed bagels on the bottom. Sprinkle half the chopped apple and half the grated cheese. Repeat.
- Beat the eggs and milk together and pour over the bread/apple/cheese mixture. Gently press down to help the bread or bagels absorb the liquid.
- Bake for 60-65 minutes or until the egg mixture has cooked and the top is a deep golden brown. Remove from oven and let set for 5 minutes. Serve with a drizzle of maple syrup.
